It starts deep in the cloud forests of Ethiopia’s Highlands. A bird, a bushbuck or even a civet drops a few coffee seeds with a package of natural fertilizer. With abundant rain and time this small seed grows into a beautiful, large coffee tree. These wild coffee plants flower in February and then bear the soft red fruits that contain two hard green coffee beans. Wild coffee is neither cultivated nor maintained and a complex system of ancestral entitlements regulates who can gather the coffee berries when they ripen in the forests. They choose only the red ripe berries, which provide the best quality. Locals distinguish this forest coffee from garden or plantation coffee by the name wof zerash, or ‘sown by the birds’. This coffee grows wild as a natural part of the ecosystem, most favorably under the cover of mountain rainforest trees.
